Pork

Pork is the culinary name given specifically to the meat derived from domestic pigs (Sus scrofa domesticus). It currently ranks as the most widely consumed meat across the globe, with historical evidence indicating that the domestication and farming of pigs for food purposes dates as far back as 5000 BC.

Pork can be consumed fresh after cooking or enjoyed in various preserved forms. Preservation methods, such as curing, play an important role in enhancing pork’s shelf life, flavor, and texture.

Popular examples of preserved pork products include ham, smoked pork, gammon, bacon, and sausages. Additionally, charcuterie is a specialized culinary field dedicated entirely to creating prepared meat products, many of which prominently feature pork.

Pork holds particular popularity in East and Southeast Asia, where it is admired not only for its savory flavor but also its succulent texture and rich fat content, making it an essential ingredient in many traditional dishes.

In the Western world, pork also maintains a prominent role, especially throughout Central European cuisines, where pork-based dishes like roasts, sausages, and diverse cured meat preparations occupy a central place in culinary traditions.

Despite its widespread enjoyment, pork consumption is explicitly prohibited according to Jewish kosher dietary laws and Islamic halal dietary guidelines. This long-standing dietary restriction carries deep cultural roots, with various historical, hygienic, and symbolic explanations proposed for its origin.

Consequently, the availability and sale of pork are limited within Israel, catering mainly to non-observant communities, and are outright illegal in certain predominantly Muslim countries due to religious beliefs.
